Secret Pocket Cookies

Kids love pockets… especially secret pockets! My son carries his epinephrine in his own “secret” pocket every day at school.  It’s sewn into the side seem of his pants and sealed with a zipper so it can’t fall out accidentally during those times he’s actively climbing on the playground.

It’s not really secret.  His teachers and admins know about it and self carrying is specified in his 504 plan.  But to him, it is a “secret” pocket because he’s not supposed to take it out of the pocket and show it to anyone, ever… except for in real emergencies. And because he knows that always having his epinephrine on his person is the best way to gain quick access in a real emergency, he values and respects the secret pocket rules.

These pocket cookies are just as fun (ok, they’re actually way more fun) than the secret pocket in my son’s school pants.  But, just like kids love to do with pockets, you can stuff just about anything imaginable inside of them!  We’ve tried pie filling, jam, chocolate sunbutter spread, fruit snacks, gummy bears & all kinds of other yummy candies and combinations.

The real secret to these cookies is the cinnamon and cream cheese alternative in the dough. This makes for a super soft cookie with crispy edges and amazing flavor. The flour also makes a difference. My secret to non-gritty gluten-free cookies is Better Battertruly the best gluten-free flour I have ever found for cookie baking! Anything you choose to stuff inside the pocket only adds to the already amazing texture and taste!

So go ahead, get creative, try it yourself!  But don’t forget to fill the countertop with fun toppings for the kids to stuff their pocket cookies, too!

Secret Pocket Cookies

Ingredients

Directions

  1. Cream sugar with butter and cream cheese alternatives.
  2. Add vanilla, cinnamon, and flour and mix well.
  3. Separate the dough into four sections and chill in the refrigerator overnight.
  4. Remove dough from fridge, one section at a time and separate it into golf ball sized balls of dough (one quarter of dough recipe makes about six cookies).
  5. Place each ball of dough on individually cut squares of parchment paper.
  6. Place another piece of parchment paper on top of each ball and flatten with the palm of your hand or bottom of a glass (keeping the dough about 1/4 inch thick).
  7. Top with the secret fillings of your choice, then gently lift one side of the parchment paper to fold the cookie over itself.
  8. Seal the edges of the cookie together and place on lined cookie sheet.
  9. Chill in the fridge for 1 more hour.
  10. Turn oven to 350 degrees F and wait until fully heated before removing the cookies from the fridge.
  11. Bake 15 to 18 minutes until edges start to brown.
  12. Remove from oven and cool completely on pan.
