Rule-Breaking Back-to-School Breakfast Cookies

We’re back into the daily grind of school, structure, rules and more rules.  It’s time to shake things up by allowing a few rules to be broken… starting with cookies for breakfast!

Not only are these cookies healthy enough to eat for breakfast, they break other rules too (no baking, no measurements, no set list of ingredients).

Rule-Breaking Back to School Breakfast Cookies {gluten free, vegan, top8free}

Ingredients

  • 1 to 2 ripe bananas
  • a scoop or two of sunbutter
  • half a glass of safe milk
  • oats or quinoa flakes
  • a dash of cinnamon
  • a pinch of nutmeg (optional)
  • any of the following as a natural sweetener (can use more than one):
  • raw honey
  • real maple syrup
  • vanilla
  • coconut sugar
  • agave
  • stevia
  • any of the following to add texture:
  • chocolate chips
  • seeds
  • raisins
  • dates
  • other dried fruit

Directions

  1. In a saucepan, combine bananas, milk, sugars (if used), and sunbutter over medium heat.
  2. Stir until mixture is smooth and simmering.
  3. Remove from heat and add remaining ingredients until the desired texture and flavor are reached.
  4. Spoon onto parchment paper-lined sheet and refrigerate for 1 hour or overnight.
